Garlic Lemon Shrimp Skewers on the Grill
8 ingredients
10 steps
What you need
- 700 g (1 1/2 lb) large shrimp, peeled and deveined, tails on
- 3 tbsp olive oil, plus a little for serving
- 3 clove garlic, minced
- 1 lemon
- 1/2 tsp sweet paprika
- 3/4 tsp salt
- 1/2 tsp black pepper, freshly ground
- 2 tbsp flat-leaf parsley, chopped
Method
Restated from the original video
- 1
If using wooden skewers, soak them in water for 30 min so they do not burn.
- 2
Finely grate the zest from the lemon, then halve it. Squeeze one half and cut the other into wedges.
- 3
Stir the olive oil, garlic, lemon zest, 1 tbsp of the juice, paprika, salt and black pepper together in a bowl.
- 4
Pat the shrimp dry, add them to the bowl and toss well.
- 5
Cover and chill for 20-30 min, no longer, or the lemon starts to turn the shrimp mushy.
- 6
Heat the grill as hot as it will go and brush the grates clean.
- 7
Thread the shrimp onto the skewers, packing them snugly so they stay juicy.
- 8
Grill until the underside turns pink with charred spots, about 2 min.
- 9
Turn the skewers and grill until the shrimp are opaque all the way through and curled into a loose C, 1-2 min more.
- 10
Pile the skewers on a platter, drizzle with a little olive oil and the remaining juice, and scatter the parsley over. Serve with the lemon wedges.
