Butter-Fried Eggs, Sunny Side Up or Over Easy
4 ingredients
8 steps
What you need
- 2 large eggs
- 1 tbsp butter, or vegetable oil
- salt, to taste
- black pepper, to taste
Method
Restated from the original video
- 1
Set a non-stick or well-seasoned frying pan over medium-low heat for 1 min.
- 2
Add the butter and let it melt and foam without browning.
- 3
Crack each of the eggs into a small cup and slide it gently into the pan, keeping them apart.
- 4
Cook undisturbed until the whites are fully set and the edges just crisp, 2-3 min. The yolks should stay runny.
- 5
Tilt the pan and spoon a little hot butter over the white around each yolk to set any glassy patches.
- 6
For sunny side up, stop here. For over easy, flip carefully with a thin spatula and cook 20-30 seconds; give it 1 min for over medium or 2 min for over hard, until the yolk is firm.
- 7
A runny yolk is a lightly cooked egg, so use pasteurized eggs or cook the yolks firm for anyone young, elderly, pregnant or immunocompromised.
- 8
Season with salt and pepper and serve right away.
