Belarusian Draniki Potato Pancakes with Sour Cream

8 ingredients

10 steps

What you need

  • 1 kg (2 1/4 lb) starchy potatoes, peeled
  • 1 medium onion, peeled
  • 1 egg
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper, ground
  • 80 ml (1/3 cup) sunflower oil, for frying, plus more as needed
  • 200 g (3/4 cup) sour cream, for serving

Method

Restated from the original video

  1. 1

Grate the onion on the fine side of a box grater into a large bowl.

  2. 2

Grate the potatoes finely into the same bowl, stirring now and then so the onion keeps them from darkening.

  3. 3

Tip the mixture into a sieve and press gently to drain off the excess liquid. Return it to the bowl.

  4. 4

Beat in the egg, flour, salt and pepper to make a loose, spoonable batter.

  5. 5

Heat a thin layer of the oil in a large frying pan over medium heat.

  6. 6

Drop in heaped tablespoons of batter and flatten each to about 1 cm (1/2 in) thick.

  7. 7

Fry until the underside is deep golden and crisp, 3-4 min.

  8. 8

Turn and fry the other side until golden and the centre is cooked through, 3-4 min more.

  9. 9

Drain on paper towels and keep warm while frying the rest, adding oil to the pan as needed and stirring the batter before each batch.

  10. 10

    Serve hot with sour cream.

About draniki

Draniki are potato pancakes made from grated raw potato bound with egg and a little flour, fried until the edges turn dark and crisp against a soft center.

What cooks argue about

Cooks argue over draining the potato: squeezing out the liquid for a crisper pancake, or leaving the starchy liquid in, since its settled starch acts as a binder some think holds the pancake together better.
