11 ingredients

14 steps

What you need

  • 440 g (3 1/2 cups) all-purpose flour, plus extra for dusting
  • 1 1/2 tsp instant yeast
  • 50 g (1/4 cup) sugar
  • 240 ml (1 cup) whole milk
  • 2 egg yolks
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 55 g (1/2 stick) unsalted butter, very soft
  • 1 egg, for brushing
  • 120 g (1/2 cup) poppy seed filling, at room temperature
  • 120 g (1/2 cup) plum butter, thick, at room temperature

Method

Restated from the original video

  1. 1

Whisk the flour, yeast and sugar together in the bowl of a stand mixer.

  2. 2

Warm the milk to about 40 °C (105 °F), whisk in the yolks and vanilla, then pour into the flour.

  3. 3

Mix with the dough hook on low speed for 1 min, until a rough, shaggy dough forms.

  4. 4

Add the salt and the soft butter. Knead on medium-high for 8 min, until the dough is smooth, elastic and pulls away from the sides. Kneading by hand takes 12-15 min.

  5. 5

Cover the bowl and leave it somewhere warm until the dough has doubled, about 1 1/2 hours.

  6. 6

Tip the dough onto a floured counter, fold the edges in toward the middle, then flip it seam side down. Cover and rest 10 min.

  7. 7

Cut the dough into 16 pieces of 50-55 g each. Pull the edges of each piece into the middle, pinch the seam, and roll it into a smooth ball under your palm.

  8. 8

Set the balls seam side down on parchment-lined baking sheets, 5 cm (2 in) apart. Cover with a towel and let them rise for 30 min, until visibly larger.

  9. 9

Heat the oven to 180 °C (350 °F), fan setting.

  10. 10

Press the floured base of a small glass into the center of each ball to make a wide, shallow well with a raised rim about 1 cm (1/2 in) high.

  11. 11

Beat the egg with a fork and brush it over the rims.

  12. 12

Spoon about 1 tbsp of filling into each well: poppy seed filling in 8, plum butter in the other 8.

  13. 13

Bake 12-15 min, until the rims are medium golden brown.

  14. 14

Cool the kolache on a wire rack. They are best the day they are baked.
