Method
Restated from the original video
- 1
Cut the potatoes into 1.5 cm (1/2 in) cubes. Peeling is optional.
- 2
Put the potatoes in a pot with cold water to cover and 1 tbsp of the salt. Bring to a boil and cook until just tender at the edges, 4-5 min.
- 3
Drain and spread the potatoes on a tray. Let them steam dry for 5 min.
- 4
Heat the oil in a large heavy skillet over medium-high heat. Add the potatoes in one layer.
- 5
Leave them alone for 4-5 min, until the underside is golden and crisp. Turn and cook, stirring only now and then, until crusty all over, 8-10 min.
- 6
Add the onion and green pepper. Cook, stirring, until the onion is soft and browned at the edges, 5-6 min.
- 7
Sprinkle with the paprika, garlic powder, the remaining 1 tsp salt and black pepper. Toss and cook 1 min more.
- 8
Serve hot, straight from the pan.
