- 1 large tomato, chopped
- 2 tbsp tomato paste
- 2 tsp baharat, Gulf-style mixed spice
- 1 tsp black pepper
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 1 tsp ground cinnamon
- 1 tsp ground green cardamom

Method
Restated from the original video
- 1
Heat the ghee and olive oil in a large heavy pot over medium-high heat. Add the garlic and stir for 15 seconds.
- 2
Add the onion and cook, stirring, until golden brown, 8-10 min.
- 3
Add the tomato along with the tomato paste. Cook, stirring, until it collapses into a thick mash, 4-5 min.
- 4
Add the baharat, black pepper, cumin, turmeric, cinnamon, cardamom and the dried lime. Stir for 30 seconds until fragrant.
- 5
Add the lamb and 1 1/2 tsp salt and turn the meat to coat it in the spices. Pour in the hot water and bring to a boil.
- 6
Skim off any foam. Cover, lower the heat and simmer gently until the lamb is nearly tender, 60-70 min.
- 7
Add the pumpkin, carrot and potato. Cover and cook for 10 min.
- 8
Add the zucchini and cook until all the vegetables are tender but still hold their shape, about 10 min more. The lamb should pull easily from the bone and reach well above 71 °C (160 °F).
- 9
Taste and adjust the salt. If the stew looks too thick, add a little hot water. It should be brothy.
- 10
Tear the bread into pieces and spread them in a wide serving dish.
- 11
Ladle the broth over the bread so it soaks through, then top with the lamb and vegetables.
- 12
Scatter the coriander over the top and serve at once.
