12 ingredients
10 steps
What you need
- 350 g (12 oz) ground lamb
- 350 g (12 oz) ground beef, about 20% fat
- 1 onion, medium
- 2 cloves garlic, finely grated
- 1 bunch flat-leaf parsley, about 30 g (1 oz), leaves finely chopped
- 1 1/2 tsp ground cumin
- 1 tsp ground allspice
- 1 tsp sweet paprika
- 1/2 tsp ground cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp neutral oil, for the grill
Method
Restated from the original video
- 1
If using wooden skewers, soak 8 of them in water for at least 30 min.
- 2
Grate the onion, tip it into a sieve and press hard with a spoon to squeeze out the juice.
- 3
Put the lamb, beef, onion, garlic and parsley in a large bowl.
- 4
Add the cumin, allspice, paprika, cinnamon, salt and black pepper.
- 5
Knead with your hands for 2-3 min until the mixture turns sticky and holds together.
- 6
Cover and chill for 30 min so it firms up and is easier to shape.
- 7
Divide into 8 portions. With damp hands, squeeze each one around a skewer into a log about 2 cm thick.
- 8
Heat a grill or grill pan to medium-high and brush the grates with the oil.
- 9
Grill the kofta, turning every 2 min, until browned on all sides and cooked through with no pink inside, 8-10 min in total (71 °C / 160 °F in the center).
- 10
Rest for 2 min, then serve hot.
