Gulf-Style Qahwa with Cardamom and Saffron
6 ingredients
8 steps
What you need
- 600 ml (2 1/2 cups) water
- 3 tbsp Arabic coffee, lightly roasted beans, coarsely ground
- 8 green cardamom pods
- 1 pinch saffron threads
- 1 tsp rose water, optional
- 6 dates, for serving
Method
Restated from the original video
- 1
Bring the water to a boil in a small saucepan or a dallah.
- 2
Stir in the coffee. When it foams up, lower the heat so it does not boil over.
- 3
Simmer gently, uncovered, for 10-12 min.
- 4
Lightly crack the cardamom in a mortar so the pods split open.
- 5
Add the cardamom and saffron to the pot and simmer for 2-3 min more.
- 6
Take the pot off the heat, stir in the rose water if using, and leave it for 3-5 min so the grounds sink.
- 7
Pour slowly through a fine strainer into a thermos or serving pot, leaving the sludge behind.
- 8
Serve unsweetened in small handleless cups, a few sips at a time, with the dates alongside.
