Crisp Buttermilk Waffles

11 ingredients

9 steps

What you need

  • 250 g (2 cups) all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 480 ml (2 cups) buttermilk
  • 115 g (1 stick) unsalted butter, melted and cooled slightly
  • 1 tsp vanilla extract
  • neutral oil, for greasing
  • maple syrup, for serving

Method

Restated from the original video

  1. 1

Turn on the waffle iron to preheat. Heat the oven to 100 °C (200 °F) and set a wire rack on a baking sheet inside.

  2. 2

In a large bowl, whisk together the dry ingredients: flour, salt, sugar, baking soda and baking powder.

  3. 3

In a second bowl, beat the eggs, then whisk in the buttermilk, melted butter and vanilla.

  4. 4

Pour the wet mixture into the dry one and fold with a spatula just until no dry flour shows. Small lumps are fine.

  5. 5

Let the batter stand for 5 min while the iron finishes heating.

  6. 6

Brush the plates of the iron lightly with oil.

  7. 7

Ladle in enough batter to cover about two thirds of the grid and close the lid. Cook until deep golden and crisp and the steam has almost stopped, 4-5 min.

  8. 8

Move the waffle onto the rack in the oven so it stays crisp. Repeat with the rest of the batter.

  9. 9

    Serve hot with maple syrup.

About waffles

A griddle batter similar to pancake batter, poured into a hot patterned iron and cooked until the outside turns crisp and the inside stays soft.

What cooks argue about

Cooks argue over adding cornstarch or extra egg white for a crisper exterior against a plainer batter closer to pancakes, and over an airier yeasted overnight batter versus a quick baking-powder mix.
