Method

Restated from the original video

  1. 1

Core the tomatoes and cut them into rough wedges or chunks.

  2. 2

Peel the cucumber in stripes if the skin is thick, halve it lengthwise and cut into thick half-moons.

  3. 3

Seed the pepper and slice it into thin rings.

  4. 4

Slice the onion into thin rings.

  5. 5

Pile the tomatoes, cucumber, pepper and onion in a wide shallow bowl and scatter the olives over them.

  6. 6

Sprinkle with a little salt and toss gently with your hands.

  7. 7

Lay the feta on top as a single slab.

  8. 8

Pour the olive oil over everything, letting some run over the cheese.

  9. 9

Crumble the oregano between your fingers over the feta, add a grind of black pepper and serve straight away.

About horiatiki salad

Tomato, cucumber, green pepper, red onion and kalamata olives dressed in olive oil, with a slab of feta laid whole on top rather than crumbled in.

What cooks argue about

The sharpest divide is dressing: some cooks use only olive oil and a pinch of oregano, arguing the tomato and feta already provide enough acid, others add red wine vinegar.
