Fresh Tomato, Onion and Serrano Salsa (Pico de Gallo)
6 ingredients
7 steps
What you need
- 500 g (1 lb) Roma tomatoes, 4-5 firm, ripe ones
- 1/2 white onion, medium
- 2 serrano chiles, or 1 jalapeño
- 1 handful (1/2 cup chopped) cilantro, leaves and tender stems
- 2 tbsp lime juice, from 1 lime
- 1/2 tsp salt, plus more to taste
Method
Restated from the original video
- 1
Halve the tomatoes and scoop out the watery seeds with a teaspoon if they are very juicy.
- 2
Cut the tomatoes into small, even dice, about 5 mm, and put them in a bowl.
- 3
Dice the onion just as finely and add it.
- 4
Stem the chiles, remove the seeds and pale ribs for less heat, mince them and add to the bowl.
- 5
Chop the cilantro and add it with the lime juice and salt.
- 6
Toss gently, then let it sit for 15 min so the salt draws out the juices.
- 7
Taste, adjust the salt and lime juice, and serve the same day.
About pico de gallo
Diced tomato, onion, serrano, and cilantro are tossed with lime juice into a chunky, uncooked salsa, always made fresh, never simmered.
