What you need

  • 2 Cuban bread loaves, about 40 cm (16 in) long, or soft French-style loaves
  • 4 tbsp yellow mustard
  • 400 g (14 oz) roast pork, thinly sliced, ideally mojo-marinated
  • 250 g (9 oz) cooked ham, thinly sliced
  • 250 g (9 oz) Swiss cheese, thinly sliced
  • 2 dill pickles, sliced lengthwise into thin planks
  • 30 g (2 tbsp) butter, softened

Method

Restated from the original video

  1. 1

Cut each loaf in half crosswise, then split each piece open lengthwise.

  2. 2

Spread the cut sides of the bread with the mustard.

  3. 3

On the bottom halves, layer half the cheese, then the ham, the pork and the pickles.

  4. 4

Top with the rest of the cheese and close with the top halves.

  5. 5

Brush the outside of each sandwich with the softened butter.

  6. 6

Heat a large heavy frying pan or griddle over medium heat.

  7. 7

Lay the sandwiches in the pan and weigh them down with a second heavy pan, pressing them to about half their height.

  8. 8

Cook until the underside is crisp and golden, 3-4 min.

  9. 9

Flip, press again and cook the other side for 3-4 min, until the cheese melts and the filling is hot.

  10. 10

Cut each sandwich diagonally and serve.

About cuban sandwich

Cuban bread is layered with roast pork, ham, Swiss cheese, pickles, and mustard, then pressed flat on a hot plancha until the cheese melts and the crust crisps.

What cooks argue about

Tampa versus Miami is the real fight: Tampa's version adds Genoa salami, Miami's does not, and cooks argue over whether that makes Tampa's the true original or a later addition.
