Chocolate-Glazed Sweet Curd Bars
8 ingredients
8 steps
What you need
- 400 g (14 oz) full-fat curd cheese (tvorog), dry and crumbly, not wet; farmer's cheese works
- 50 g (3 1/2 tbsp) soft butter, for the filling
- 60 g (1/2 cup) powdered sugar
- 2 tbsp sour cream
- 1 tsp vanilla extract, or 1 sachet (8 g) vanilla sugar
- 1 pinch salt
- 200 g (7 oz) milk chocolate, chopped
- 20 g (1 1/2 tbsp) butter, for the glaze
Method
Restated from the original video
- 1
If the curd is wet, wrap it in a clean cloth and press out the liquid for 15 min.
- 2
Rub the curd through a fine sieve into a bowl. This makes the bars smooth rather than grainy.
- 3
Beat in the soft butter, powdered sugar, sour cream, vanilla and salt until the mass is uniform and holds its shape.
- 4
Line a tray with parchment. Shape the mass into 8 bars, each about 8 cm (3 in) long and 2 cm (3/4 in) thick.
- 5
Freeze the bars until firm but not rock hard, 30-40 min.
- 6
Melt the chocolate with the glaze butter in a heatproof bowl set over barely simmering water, stirring until smooth. Cool for 5 min so it is fluid but not hot.
- 7
Dip the bars one at a time, turning them with a fork so they are fully coated. Tap off the excess and set them on parchment.
- 8
Chill until the glaze is set, about 30 min. Keep refrigerated and eat within 3 days.
