8 ingredients
7 steps
What you need
- 4 large eggs
- 100 g (3 1/2 oz) smoked sausage, cooked, such as a mild smoked kielbasa
- 2 small tomatoes, cut into wedges
- 20 g (1 1/2 tbsp) butter
- salt, to taste
- black pepper, freshly ground, to taste
- 1 tbsp fresh dill, chopped
- 2 slices rye bread, to serve
Method
Restated from the original video
- 1
Cut the sausage into slices 5 mm (1/4 in) thick.
- 2
Melt the butter in a 24-26 cm (10 in) skillet over medium heat. Add the sausage and fry until browned in spots, about 2 min per side.
- 3
Add the tomatoes and cook, stirring, until they start to soften, 1-2 min.
- 4
Push the sausage and tomatoes aside to make four gaps and crack an egg into each. Season with salt and pepper.
- 5
Reduce the heat to low, cover and cook until the whites are set and the yolks have a thin film over them, 3-4 min. For firm yolks, cook 2 min longer.
- 6
The yolks stay soft, so use pasteurized eggs for young children, pregnant women, older people or anyone immunocompromised.
- 7
Sprinkle with dill and serve from the pan with rye bread.
