4 ingredients
8 steps
What you need
- 1 kg (2 lb) ripe tomatoes, fleshy, such as plum tomatoes
- 100 g (3 1/2 oz) horseradish root, peeled
- 1 garlic head, about 50 g (2 oz), cloves peeled
- 1 tbsp salt, heaped
Method
Restated from the original video
- 1
Open a window or switch on the extractor fan. Fresh horseradish releases sharp fumes.
- 2
Cut a shallow cross in the base of each tomato and drop them into boiling water for 30-60 seconds.
- 3
Move the tomatoes to cold water, then peel off the skins and cut out the cores.
- 4
Pass the tomatoes through a meat grinder, or chop them very finely, and tip the pulp into a bowl.
- 5
Grind or finely grate the horseradish and garlic, and add both to the tomatoes.
- 6
Stir in the salt and leave the mixture at room temperature for 30 min, stirring now and then, until the salt has dissolved.
- 7
Taste it. Add a little more salt if it needs it.
- 8
Spoon it into clean, dry jars and keep it in the refrigerator for up to 2 weeks.
