Where it comes from

Huevos rancheros started as a ranch breakfast in rural Mexico, built from tortillas, eggs, and whatever salsa and beans a household had on hand before the fields were worked.

What cooks argue about

The main split is the yolk: some cooks want it broken and cooked through so the sauce and egg mix, others insist on a runny yolk that breaks open at the table.
