Kissel

Kissel is fruit, often cranberry, simmered with sugar and thickened with potato starch into a pourable, faintly jellied drink somewhere between a juice and a pudding.

Where it comes from

Its texture depends on potato starch, which became common in Russian kitchens once the potato itself spread widely, replacing older grain-starch versions that were thicker and closer to a porridge.

What cooks argue about

The variable that matters most is starch ratio: too little and it stays thin like juice, too much and it sets closer to jelly, with no fixed agreement on how thick it should be.
