Syrniki

Syrniki are pan-fried patties made from tvorog, a soft farmer's cheese, mixed with egg, a little flour, and sugar, browned outside while staying soft and slightly tangy inside.

Where it comes from

They rely on tvorog, a curd cheese common across Russian and Eastern European dairies, made from soured milk drained of most of its whey, a way to use dairy that hadn't sold fresh.

What cooks argue about

Cooks disagree on flour: more flour makes the patties easier to shape and less likely to fall apart, but purists want as little as possible so the cheese's texture and tang stay forward.
