Kulfi

Milk reduced slowly until thick, sweetened, flavored with cardamom and pistachio, then frozen in molds without churning. Denser and less airy than Western ice cream because no air gets beaten in.

Where it comes from

The dessert developed from the same slow milk-reduction technique used in other North Indian sweets, adapted for freezing once ice became available through trade routes and later mechanical refrigeration. Its dense texture comes directly from that lack of churning.

What cooks argue about

Cooks argue over reducing milk from scratch over low heat, which builds the deepest flavor and density, against starting from condensed or evaporated milk as a shortcut that freezes faster but tastes flatter.
