Rasgulla
Spongy balls of fresh cheese curd cooked in a light sugar syrup until they puff up and turn soft. Served chilled, mild and only lightly sweet compared to other Indian sweets.
Where it comes from
The sweet's origin is genuinely disputed between Odisha, where it's tied to temple food traditions in Puri, and West Bengal, where a Kolkata sweet-maker is credited with popularizing it in the 19th century. Both regions now hold separate official recognition for their versions.
What cooks argue about
Cooks argue over how much to knead the cheese curd: too little leaves a grainy ball that cracks in the syrup, too much makes it dense and rubbery.
