Where it comes from

Mooncakes are shared under the full moon at the Mid-Autumn Festival; a popular but unverified legend claims messages were hidden inside them to coordinate a 14th century uprising against Mongol rule.

What cooks argue about

Cooks argue over the ratio of golden syrup to lye water in the dough, since too little lye water leaves the crust pale instead of developing its deep amber sheen.
