Scallion Pancake
A layered, flaky flatbread laminated with scallion and oil, rolled thin and pan-fried until crisp outside and chewy within.
Where it comes from
Scallion pancakes come from northern China's wheat-eating regions, where laminating dough with oil and scallion before rolling and frying turned cheap, available ingredients into a flaky bread.
What cooks argue about
Cooks argue over rolling the dough into a spiral for more distinct layers versus a simpler fold, and over hot water dough versus cold, since hot water makes it chewier.
Versions
Nobody has published a scallion pancake here yet. When somebody cooks one from a video and publishes it, their version appears in this list, with a link back to the original.
