Paneer Tikka

Cubes of fresh cheese marinated in yogurt and spice, skewered with peppers and onion, and grilled until charred at the edges. A vegetarian counterpart to chicken tikka.

Where it comes from

The dish adapts the Punjabi tandoor tradition for vegetarian diners, using paneer's firmness to hold up on a skewer the way meat does. It grew alongside chicken tikka as tandoor cooking spread into restaurants.

What cooks argue about

Cooks argue over how long to marinate the paneer, since it doesn't absorb flavor as deeply as meat and can turn rubbery if left too long in acidic yogurt.
