Where it comes from
Sweet and sour pork descends from Cantonese guo bao rou, adapted for overseas Chinese restaurant audiences with ketchup and pineapple replacing the more restrained vinegar-sugar glaze of the original.
What cooks argue about
Cooks argue over double frying the pork for a shatter-crisp coating that survives being tossed in sauce, versus a single fry, which softens almost as soon as the sauce hits it.
