Where it comes from
Sesame chicken developed alongside General Tso's chicken and orange chicken in American Chinese restaurant kitchens, using the same fry-then-glaze method but aimed at a milder, chile-free palate.
What cooks argue about
Cooks argue over toasting the sesame seeds before topping the dish for nuttiness versus using them raw, and over reducing the glaze, since it hardens if taken too far.
