Turkish Coffee
Turkish coffee is very finely ground coffee simmered slowly with water and sugar in a small pot, unfiltered, so the grounds settle at the bottom of the cup after pouring.
Where it comes from
The brewing method dates to Ottoman court kitchens and spread through trade and conquest across the Balkans and Middle East, with the small copper pot called a cezve becoming standard far beyond Turkey's borders.
What cooks argue about
The entire method rides on the foam: pulling the pot off the heat as it rises without boiling over, then dividing that foam evenly across cups, which many treat as the real test.
