8 ingredients

10 steps

What you need

  • 500 g (1 lb 2 oz) tvorog, farmer's cheese, about 9% fat, well drained
  • 1 large egg
  • 3 tbsp sugar
  • 1 tsp vanilla sugar, optional
  • 1 pinch salt
  • 60 g (1/2 cup) plain flour, plus about 40 g (1/3 cup) for coating
  • 4 tbsp sunflower oil, or other neutral oil
  • sour cream, for serving

Method

Restated from the original video

  1. 1

Mash the tvorog with a fork, or press it through a sieve, until no large lumps remain.

  2. 2

Mix in the egg, sugar, vanilla sugar and salt until evenly combined.

  3. 3

Sift in the 60 g of flour and stir to a soft dough that holds its shape. If it sticks badly to your hands, add 1-2 tbsp more flour.

  4. 4

Spread the coating flour on a plate.

  5. 5

Roll the dough into a log about 5 cm (2 in) thick on the floured plate and cut it into 12 slices.

  6. 6

Shape each slice into a round patty about 1.5 cm (1/2 in) thick and coat it lightly in flour on all sides.

  7. 7

Heat the oil in a large frying pan over medium heat.

  8. 8

Fry the syrniki in batches, without crowding, until deep golden underneath, 3-4 min.

  9. 9

Turn them over and fry until the second side is golden and they feel springy, 3-4 min more.

  10. 10

Drain briefly on paper towels and serve warm with sour cream.

About syrniki

Syrniki are pan-fried patties made from tvorog, a soft farmer's cheese, mixed with egg, a little flour, and sugar, browned outside while staying soft and slightly tangy inside.

What cooks argue about

Cooks disagree on flour: more flour makes the patties easier to shape and less likely to fall apart, but purists want as little as possible so the cheese's texture and tang stay forward.
