What you need

  • 4 bratwurst sausages, about 500 g (1 lb) in total
  • 2 tbsp neutral oil, divided
  • 1 small onion, finely diced
  • 1 tbsp tomato paste
  • 2 tbsp mild curry powder, plus extra for dusting
  • 1 tsp sweet paprika
  • 400 g (14 oz) ketchup
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • cayenne pepper, to taste
  • french fries or bread rolls, for serving

Method

Restated from the original video

  1. 1

Warm 1 tbsp of the oil in a small saucepan over medium heat.

  2. 2

Add the onion and soften it without letting it colour, 4-5 min.

  3. 3

Stir in the tomato paste, curry powder and paprika and fry for 1 min until the spices smell toasty.

  4. 4

Pour in 3 tbsp water and stir to loosen the spice paste.

  5. 5

Add the ketchup, vinegar and honey. Simmer gently, stirring now and then, until slightly thickened, 8-10 min.

  6. 6

Season the sauce with cayenne to taste. Blend it smooth with a stick blender if a silky sauce is preferred, then keep it warm.

  7. 7

Heat the remaining oil in a frying pan over medium heat.

  8. 8

Fry the sausages, turning often, until browned all over and cooked through to 71 °C (160 °F) inside, 10-12 min.

  9. 9

Cut each sausage into slices about 1.5 cm (1/2 in) thick and lay them on plates.

  10. 10

Spoon the hot sauce over the slices and dust with a little more curry powder.

  11. 11

Serve straight away with fries or a bread roll on the side.

About currywurst

Sliced fried sausage doused in a curry-spiced ketchup sauce, dusted with more curry powder and served with fries.

What cooks argue about

Whether the sausage keeps its skin on or gets peeled before slicing is a real regional split, changing the bite from a snap to soft throughout, and the sauce ranges from quick to slow-simmered.
