Foamy Turkish Coffee Brewed in a Cezve

3 ingredients

8 steps

What you need

  • 140 ml (2/3 cup) cold water, 2 Turkish coffee cups
  • 4 tsp Turkish coffee, ground as fine as powder
  • 2 tsp sugar, optional: none for plain, 1 tsp per cup for medium sweet

Method

Restated from the original video

  1. 1

Measure the water with the coffee cups you will serve in, one cup per person, and pour it into a cezve.

  2. 2

Add the coffee and the sugar, if using, and stir until no dry powder floats on top.

  3. 3

Set the cezve over low heat and leave it alone; do not stir again from here on.

  4. 4

Heat slowly until a thick foam builds and starts to climb the pot, 3-4 min. Pull it off the heat before it boils.

  5. 5

Spoon some foam into each cup.

  6. 6

Return the cezve to the heat and let the coffee rise once more, about 30 seconds, then take it off just before it boils.

  7. 7

Pour slowly into the cups, aiming at the foam so it stays intact.

  8. 8

Leave for 1 min so the grounds settle, then serve with a glass of water. Do not drink the sludge at the bottom.

About turkish coffee

Turkish coffee is very finely ground coffee simmered slowly with water and sugar in a small pot, unfiltered, so the grounds settle at the bottom of the cup after pouring.

What cooks argue about

The entire method rides on the foam: pulling the pot off the heat as it rises without boiling over, then dividing that foam evenly across cups, which many treat as the real test.
