Method

Restated from the original video

  1. 1

Stir the sugar into 120 ml (1/2 cup) water in a small pan and bring to a simmer, stirring until the liquid turns clear, about 2 min.

  2. 2

Leave the sweetened water to cool completely, then chill it.

  3. 3

Cut the pineapple into bite-size chunks.

  4. 4

Hull the strawberries and halve or quarter them, depending on size.

  5. 5

Pull the grapes off their stems and halve any large ones.

  6. 6

Peel the kiwis and slice them into half-moons.

  7. 7

Cut the peel and white pith off the oranges with a sharp knife, then free each segment from its membranes.

  8. 8

Core the apples and dice them into 1.5 cm (1/2 in) pieces.

  9. 9

Tip all the cut fruit into a large bowl, pour the cold sugar water over and fold gently.

  10. 10

Cover and chill for 15-30 min so the juices mingle.

  11. 11

Slice the bananas and fold them in just before serving, so they stay firm and pale.

About fruit salad

Chopped apple, strawberry, pineapple, and grapes tossed together, a cold mix eaten for the contrast of textures as much as the sweetness.

What cooks argue about

The fight is over dressing: tossing the fruit with citrus juice to slow browning and add tartness, or leaving it plain, which tastes purer but browns and weeps faster.
