Where it comes from
It was invented in 1943 at a restaurant in Piedras Negras, Mexico, across the border from Texas, when a waiter named Ignacio Anaya put together a snack from fried tortillas, cheese, and pickled jalapeño after the kitchen had closed.

Cooks argue over spreading each chip individually with cheese and toppings so every bite is loaded, against piling chips in a mound, where the top gets the toppings and the bottom stays bare.
