Oats cooked in milk with honey until they soften into a thick, warm porridge, eaten plain or topped.
Where it comes from
Oats cook faster and cheaper than most grains, which made this the default warm breakfast before rolled and instant versions shortened the cooking time even further.
What cooks argue about
The fight is over cooking oats in milk, which turns creamier but can scorch and boil over, or in water, which is easier to control but tastes thinner.
