Where it comes from

Soaking oats instead of cooking them let people prepare breakfast the night before, a shortcut that spread once refrigerators made it safe to leave a sealed jar of dairy out overnight.

What cooks argue about

The debate is over the oat-to-liquid ratio: too little and the oats stay hard by morning, too much and they turn watery instead of thick.
