Red Braised Pork
Pork belly braised slowly in dark soy sauce, sugar, star anise, and wine until glossy, tender, and nearly falling apart.
Where it comes from
Red braised pork appears throughout Jiangnan and Hunan cooking, often described as a favorite of Mao Zedong, a native of Hunan, though the extent of that association is more folklore than documented fact.
What cooks argue about
Cooks argue over caramelizing sugar in oil to a deep amber before adding the pork, for color and a bitter edge, versus simmering sugar and soy together from the start.
Nobody has published a red braised pork recipe yet. The page stays out of search until one exists, which is the rule for every thin page here.
