Method

- 1
Put 4 serving bowls in the freezer. Make sure the ice is frozen hard: about 1 kg (2 lb) of ice cubes, or a solid block of ice frozen from clean water, kept in the freezer until needed.
- 2
Combine the strawberries, sugar and water in a small saucepan. Bring to a boil, then lower the heat and simmer until the strawberries are soft and the liquid is lightly thickened, 8-10 min.
- 3
Mash the strawberries with a spoon, stir in the lemon juice and pour the sauce into a jug.
- 4
Chill the sauce in the refrigerator for at least 30 min.
- 5
Take the ice out of the freezer and leave it for 5-10 min until the surface turns glossy and slightly wet. This makes the shavings soft instead of crunchy.
- 6
Shave the ice with a shaved ice machine, catching it in a chilled bowl. Turn the handle slowly and pile the ice in a tall, loose mound.
- 7
Pour some sauce over the mound, add more ice on top, then pour on more sauce.
- 8
Drizzle the condensed milk over the top.
- 9
Serve right away with a spoon, before the ice melts.
