  • 360 ml (1 1/2 cups) water, for cooking the rice
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 8 sheets nori, each cut in half
  • 250 g (9 oz) sushi-grade salmon, skinless, cut into strips 1 cm (1/2 in) thick

  • pickled ginger, for serving

Method

Restated from the original video

  1. 1

Rinse the sushi rice in a bowl, changing the water until it runs almost clear, 4-5 times. Drain and leave to soak in the 360 ml of water for 30 min.

  2. 2

Bring the rice and its soaking water to a boil in a covered pot. Lower the heat and simmer until the water is absorbed, 12-15 min.

  3. 3

Turn off the heat and leave the pot covered for 10 min.

  4. 4

Stir the rice vinegar, sugar and salt in a small bowl until dissolved.

  5. 5

Tip the hot rice into a wide shallow bowl. Pour the vinegar mixture over it and fold with a cutting motion, fanning the rice to cool it, until glossy and no longer steamy. Cover with a damp cloth.

  6. 6

Salmon eaten raw must be sushi-grade, bought from a trusted fishmonger and kept cold until the last minute. Skip raw fish for pregnant guests, young children and anyone immunocompromised.

  7. 7

Put the salmon, avocado, cucumber, wasabi, pickled ginger and soy sauce on the table with the rice and nori.

  8. 8

To roll, lay half a nori sheet shiny side down in your palm. Spread about 3 tbsp of rice over the left third.

  9. 9

Lay a strip of salmon, a few slices of avocado and some cucumber on the rice, slanting upward from the lower left corner.

  10. 10

Fold the lower left corner over the filling and roll the nori into a cone. Press the end shut with a grain of rice.

  11. 11

Eat at once, dipped in soy sauce with a little wasabi and pickled ginger on the side, while the nori is still crisp.
