Hot Yuzu Honey Tea with Fresh Peel
3 ingredients
6 steps
What you need
- 1 yuzu, washed well
- 2 tbsp honey, to taste
- 400 ml (1 2/3 cups) hot water, just off the boil
Method
Restated from the original video
- 1
Peel half of the yuzu in thin strips with a vegetable peeler, avoiding the white pith. Slice the strips very thin.
- 2
Cut the yuzu in half and squeeze out the juice, about 3 tbsp, catching the seeds in a sieve.
- 3
Divide the honey, juice and sliced peel between two mugs and stir to mix into a loose paste.
- 4
Let the hot water cool for 1-2 min, so the honey keeps its flavor, then pour half into each mug.
- 5
Stir until the honey dissolves and let the tea steep for 3 min.
- 6
Taste and add more honey if the tea is too tart. Drink hot, with the peel.
