What you need

  • 400 g (14 oz) beef small intestine, cleaned, cut into 4 cm pieces
  • 400 g (14 oz) cabbage, cut into 5 cm pieces
  • 1 bunch garlic chives, about 100 g, cut into 5 cm lengths
  • 200 g (7 oz) firm tofu, cut into 3 cm cubes
  • 60 g (2 oz) burdock root
  • 6 garlic cloves
  • 1 tsp fresh ginger, grated
  • 2 dried red chilies, sliced into rings
  • 1200 ml (5 cups) dashi
  • 4 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 3 tbsp mirin
  • 2 tbsp sake
  • 1 tsp light brown sugar
  • 1 tbsp toasted white sesame seeds
  • 250 g (9 oz) fresh champon or ramen noodles, for finishing the broth

Method

Restated from the original video

  1. 1

Put the intestine in a sieve and rinse under cold running water, rubbing gently to wash off slime and loose fat.

  2. 2

Set the sieve in the sink and pour a kettle of boiling water over the intestine. Rinse again in cold water and drain well.

  3. 3

Scrape the skin off the burdock with the back of a knife and slice it thinly on the diagonal. Soak the slices in cold water for 5 min, then drain.

  4. 4

Peel and thinly slice 4 of the garlic cloves. Grate the remaining 2.

  5. 5

In a wide, heavy pot, combine the dashi, light and dark soy sauce, mirin, sake, sugar, grated garlic and ginger. Bring to a boil over medium heat.

  6. 6

Add the intestine and burdock. Lower the heat and simmer for 10 min, skimming off any foam.

  7. 7

Add the cabbage and tofu. Simmer for 8-10 min, until the cabbage is soft and the intestine is tender and cooked through.

  8. 8

Pile the chives, sliced garlic and chilies on top. Simmer for 2-3 min, until the chives wilt.

  9. 9

Scatter the sesame over the pot and bring it to the table. Ladle into bowls and eat while the broth is boiling hot.

  10. 10

When most of the solids are gone, drop the noodles into the broth and simmer for 2-3 min until tender. Serve the noodles in the remaining broth.
