Method
Restated from the original video
- 1
Blend the shallots, garlic, lemongrass, ginger, galangal, soaked dried shrimp and drained dried chilies with 4 tbsp water into a fine paste. Stir in the curry powder.
- 2
Boil the eggs for 9-10 min. Cool in cold water, then peel and halve them.
- 3
Boil the sweet potato in salted water until very soft, about 15 min. Drain and blend with 125 ml water into a smooth puree.
- 4
Blend the fermented soybeans with 2 tbsp water into a paste.
- 5
Heat the oil in a large pot over medium heat. Fry the spice paste, stirring often, until thick and shiny and the oil separates, 8-10 min.
- 6
Add the beef and stir for 2 min to coat. Pour in the beef stock and bring to a gentle boil.
- 7
Cover and simmer for about 30 min, until the beef is tender.
- 8
Stir in the sweet potato puree, soybean paste, ground peanuts and sugar. Simmer 3-5 min, stirring, until the gravy is thick enough to coat a spoon.
- 9
Add the lime juice and salt to taste. The gravy should taste savory with a clear sweetness and a little sourness.
- 10
Cook the noodles in boiling water until tender, 1-2 min for fresh, and drain. Halve the tofu puffs.
- 11
Divide the noodles among bowls. Ladle over the gravy and beef, then top with the egg halves, tofu puffs, bean sprouts, red chilies, spring onions and fried shallots.
- 12
Serve with lime wedges.
