6 ingredients
8 steps
What you need
- 360 g (2 cups) cooked short-grain rice, freshly cooked and still warm
- 1/2 tsp salt, for your hands
- 1 tbsp neutral oil
- 1 tbsp soy sauce
- 1 tbsp mirin
- 1 sheet nori, cut into 4 strips
Method
Restated from the original video
- 1
Stir the soy sauce and mirin together in a small bowl.
- 2
Divide the warm rice into 4 equal portions. Wet your hands with water and rub a little salt over your palms.
- 3
Pack one portion of rice into a firm triangle, pressing 3-4 times with cupped hands. The rice must hold together with no loose grains. Repeat with the rest.
- 4
Heat the oil in a nonstick frying pan over medium heat.
- 5
Add the rice triangles and cook without moving them until the underside is golden and crisp, 3-4 min.
- 6
Turn gently with a thin spatula and cook the second side the same way, then toast each edge for about 30 seconds.
- 7
Lower the heat. Brush the glaze over the top and sides, cook until it sizzles and smells toasty, 20-30 seconds, then turn and glaze the other side the same way. Take care not to scorch the glaze.
- 8
Wrap a strip of nori around each triangle and serve warm.
