5 ingredients

8 steps

What you need

  • 300 g (10 oz) fresh spinach, roots trimmed
  • 3 tbsp white sesame seeds, plus a few extra to garnish
  • 2 tsp sugar
  • 2 tsp soy sauce, light
  • 1 tsp salt, for the blanching water

Method

Restated from the original video

  1. 1

Toast the sesame seeds in a dry pan over medium-low heat for 2-3 min, shaking the pan, until fragrant and a few begin to pop.

  2. 2

Grind the seeds in a mortar until most are crushed and the mix looks oily but still has some texture. Keep a few whole seeds back for the top.

  3. 3

Stir the sugar and soy sauce into the sesame paste. Add 1 tsp of water if it feels stiff.

  4. 4

Wash the spinach well in several changes of water. Bring a large pot of water to a boil and add the salt.

  5. 5

Push the spinach into the water in two batches and blanch for 30-45 seconds until bright green and wilted.

  6. 6

Move it straight into a bowl of ice water for 1 min to stop the cooking, then drain.

  7. 7

Gather the spinach into a bundle and squeeze out as much water as you can. Cut it into 4 cm (1 1/2 in) lengths and fluff apart.

  8. 8

Toss the spinach with the dressing just before serving. Mound it in small bowls and top with the reserved sesame seeds.
