Strawberry Lemonade Ice Pops
4 ingredients
8 steps
What you need
- 180 ml (3/4 cup) lemon juice, about 4 lemons
- 150 g (3/4 cup) sugar
- 480 ml (2 cups) water, 120 ml warm, the rest cold
- 150 g (5 oz) strawberries, hulled and thinly sliced
Method
Restated from the original video
- 1
Warm 120 ml (1/2 cup) of the water in a small pan until hot but not boiling.
- 2
Stir in the sugar until it dissolves completely, then pour the sweet liquid into a jug.
- 3
Add the lemon juice and the remaining cold water and stir. Taste: the mix should seem a little too sweet, since freezing dulls sweetness.
- 4
Press a few strawberry slices against the inside wall of each mold cavity.
- 5
Pour in the lemon mix, leaving 1 cm (1/2 in) of headroom because ice takes more room than liquid.
- 6
Fit the lid and sticks, or insert sticks once the surface starts to set after about 1 h.
- 7
Freeze until solid, at least 5 h or overnight.
- 8
To unmold, dip the mold in warm water for 15-20 sec, then pull each ice pop out by its stick.
